Cutting right to the heart of fine tequila
With a breadth of experience spanning 9 distilleries over 5 years, we deliver an inimitable presentation on the history and practices involved with making fine tequilas. Our experiences with the master distillers of brand names such as Patron, Milagro, Herradura, and Viva Mexico along with the Award T certification from the Consejo Regulador del Tequila have given us in-depth knowledge on the production and appreciation of tequila that we have condensed with the goal of allowing our guests to enjoy tequila as we do. Inside of the United States, our efforts have been focused on the local beer breweries of Texas and the bourbon distilleries of Kentucky.
Take a tour of tequila without leaving San Antonio
Our tequila event is designed to ignite your interest in the history and enjoyment of this fine spirit. We will teach your team the story, geographic origins, and distillation process of tequila from raw plant to bottle. Together we’ll explore the three ages of tequila and conduct a tasting of blanco (“white”), reposado (“rested”), and añejo (“aged”) varieties with an eye for detail and a nose for subtle differences.
The food pairings suggested for each spirit are made with the specific qualities of each tequila in mind.
Who we are
John Carbajal – A tequila enthusiast who has learned the trade, one distillery at a time. He has condensed his experience into an inimitable presentation. John stays involved with numerous city boards and volunteer organizations, including Visit San Antonio, San Antonio Housing and Lodging Association, the San Antonio River Walk Association, the Texas Restaurant Association, and the University of Houston San Antonio.
James Moore – His culinary passion and expertise breathes life into San Antonio’s food and beverage scene. Having owned and operated TBA Lounge for the past 5 years, he began his most recent project, Full Belly, as a chef-driven casual restaurant focusing on fresh, locally sourced ingredients and house-made cured meats. James brings a Chef’s perspective to Tequila food pairings and cocktails.

Not every venue has the required glassware to execute a large function including food and beverage. While we have prepared basic equipment suggestions, contact us and we can work with you to make suitable arrangements.

Events range from a structured and informative guided tasting with chef selected food pairings to an informal tequila-themed gathering livened by stories and spirits.
We’ve done events around Bourbon, Irish whiskey, Scotch, Beer, and of course, Tequila! Which ever beverage you’re curious about, we’re here to help.
Guided Spirit Tasting
Our speaker will provide a cursory overview of the history and production process of your spirit of choice, followed by an instructional tasting intended to help you to identify and enjoy the subtler aspects of the spirit.
Function time runs under an hour, provide an additional 30 minutes for Q&A.
Spirit Crash Course
A guided tasting of representative spirits with detailed instruction on color, taste, aroma, and finish, augmented by an informative slideshow presentation and handout materials. The host venue will need to have available AV equipment.
Presentation time runs about an hour, provide an additional 30 minutes for Q&A.
Team Building Competition
Under the expert tutelage of our speaker, your teams will compete to create their own salsas, guacamole, margaritas, or other cocktails.
Runs additional 30 minutes.
Food Pairing Banquet
To fully appreciate carefully selected expressions of your spirit of choice, our culinary expert will hand-pick food dishes from your available menu that best accentuate the different spirits.
